Take Seven Steps to Welshcake Heaven with Pat from Maddocks! 

To make these St David’s Day celebration welshcakes you will need: 

  

Ingredients (These quantities will make approximately 24 Welshcakes) 

  

250g Welsh salt butter or margarine 

500g self raising flour 

150g caster sugar, plus 50g extra for dusting 

150g currants or Sultanas 

2 large free range eggs or vegan substitute 

Pinch ground nutmeg or mixed spice 

50g plain flour for dusting your work surface and rolling out the welshcake pastry 

1tsp vegetable oil for lightly greasing the bakestone 

Special dietary needs  

  

To make vegan welshcakes in place of butter use vegan spread or margarine and use oat milk instead of egg. 

  

Wheat flour alternatives can be substituted in equal quantities e.g. gluten-free flour. 

  

Equipment 

  

Large mixing bowl 

Small bowl for cracking the egg into and a fork for beating 

Rolling pin 

Sieve 

7 cm  round cutter 

Tray 

Pallet knife 

Cooling rack 

Caster sugar shaker 

Bakestone or thick bottomed frying pan *to be heated to 170˚C. 

Step 1: Sieve together self-raising flour and mixed spice into the bowl 

  

Step 2: Add the Welsh butter, to the flour and using your fingertips rub these ingredients together until a light crumb is reached, then gently toss through the currants and sugar. 

  

Step 3: Make a well in the centre of the mix and add the beaten egg, then using your fingers bring the ingredients together to form a pliable dough ball. 

  

Step 4: Cover and place dough ball into the fridge for 30 minutes. Whilst the dough is chilling, pre heat the bakestone to a medium heat*. If you do not have a bakestone a thick bottomed frying pan will work too. 

  

Step 5: Place the dough on a lightly floured work surface, gently roll out until approximately ½ centimetre thick, cut out 7cm diameter rounds and place on a tray. 

  

Step 6: Grease the hot bakestone very lightly with vegetable oil. Place the welshcake rounds onto the bakestone for 2 minutes per side or until cooked all the way through,  remove and place on a cooling rack, whilst hot dust with caster sugar.
